Squatters Juicy IPA-Marinated Steak Tacos

ingredients

2 large navel oranges, juiced

6 oz Squatters Juicy IPA

3 garlic cloves, crushed and minced

1 tsp ground cumin

1 tsp smoked paprika

1 tsp chili powder

1 tsp brown sugar

2 tbsp vegetable oil

1 pinch red pepper flakes

1 tsp kosher salt

1/2 tsp freshly ground black pepper

2 lbs flank steak*

12-16 corn or flour tortillas

Freshly squeezed limes, for serving

Serve with your favorite toppings – salsa, avocado, sour cream, cilantro, tomatoes (DM Beer Belly for their cilantro cream recipe)

  1. Add all of the marinade ingredients to a mixing bowl and mix well to combine. Place flank steak in a large resealable plastic bag and pour in marinade. Marinate in refrigerator for 1-4 hours, flipping at least once. Don’t marinate much longer than this – the beer and the fruit juice will make the meat mushy.
  2. Remove steak from fridge 30 minutes before cooking. Heat a grill over high heat (you can also use the broiler). Grill steak for 4-5 minutes per side, or until an internal thermometer reads 130-135° F for medium rare.
  3. Let steak rest on a cutting board for 10 minutes. Slice against the grain, squeeze some fresh lime over top, and season with a little salt. Serve atop warm tortillas with your favorite toppings. * Skirt steak would work well too. Just adjust cooking times accordingly.
